A sprig of mint in a sealed jar revealed that plants 'restore' air

In 1771, Joseph Priestley found that a candle burning in a sealed jar quickly went out — but if he added a sprig of mint and left it for days, the jar could support a flame again. He'd stumbled onto plants releasing oxygen, though it took later chemists to explain why. His experiments launched the systematic study of gas exchange in plants.
